Description

Dimethyl dicarbonate ( CAS 4525-33-1 ), commercially known as DMDC and approved as E242 , is a cold-sterilization agent used to eliminate spoilage microorganisms in beverages without heat treatment. It reacts rapidly with microbial enzymes and decomposes into trace carbon dioxide and methanol, leaving no functional residue in the finished product. DMDC is the standard antimicrobial treatment for still and sparkling wines. This allows producers to stabilize product without altering flavor profiles through thermal processing. In ready-to-drink teas, juices, and isotonic sports beverages, it controls yeast and mold at dosage levels compliant with regulatory limits. Craft brewers and commercial breweries use it to treat non-alcoholic and low-alcohol beers where conventional pasteurization would compromise sensory quality. In biotechnology, DMDC functions as a nuclease inhibitor in RNA extraction workflows. It protects RNA integrity during sample processing. Dimethyl dicarbonate is supplied as a clear liquid, typically in small sealed containers for laboratory use and in larger drums or intermediate bulk containers for production. Food-grade material conforming to FCC specifications is the primary commercial grade, with purity levels generally at or above 99%.
