It reacts rapidly with microbial enzymes and decomposes into trace carbon dioxide and methanol, leaving no functional residue in the finished product. DMDC is the standard antimicrobial treatment for still and sparkling wines. This allows producers to stabilize product without altering flavor profiles through thermal processing. In ready-to-drink teas, juices, and isotonic sports beverages, it controls yeast and mold at dosage levels compliant with regulatory limits. Craft brewers and commercial breweries use it to treat non-alcoholic and low-alcohol beers where conventional pasteurization would compromise sensory quality. In biotechnology, DMDC functions as a nuclease inhibitor in RNA extraction workflows. It protects RNA integrity during sample processing.
