It functions as an emulsifier, stabilizer, and film-former, enabling manufacturers to control texture, dispersion, and moisture retention in finished products. In food and beverage production, it is used to encapsulate flavors. The additive stabilizes emulsions in soft drinks, confectionery coatings, and powdered flavor systems. Pharmaceutical manufacturers use it as a binder and suspending agent in tablet formulations and oral suspensions.
