Sodium lactate (CAS 72-17-3 ), also designated E325 , is the sodium salt of lactic acid supplied primarily as an aqueous solution. It functions as a humectant, pH buffer, and antimicrobial synergist across food, pharmaceutical, and personal care manufacturing. In processed meats and ready-to-eat foods, it extends shelf life by suppressing pathogen growth while contributing a mild, clean taste profile. Personal care formulators incorporate it into moisturizers, lotions, and scalp treatments.
