Monomyristin (CAS 27214-38-6 ), also known as glyceryl myristate and commercially available as Grindtek MM 90, is a monoglyceride ester of myristic acid used as an emulsifier. It acts as a rheology modifier across food and personal care manufacturing. It controls texture and stabilizes emulsions in finished formulations where precise consistency and phase compatibility are critical. In personal care, it functions as a structuring agent and emulsifier in creams, lotions, and stick formulations. This helps to build viscosity and stabilize oil-water systems during the production process. Food manufacturers use it to control fat crystallization and improve texture in bakery fats, margarine, and confectionery coatings.
